Air Fryer Lemongrass Chicken Chop

An easy peasy lemongrass squeezy recipe involving the air fryer. With just 3 or 4 chicken chop pieces and 3 simple ingredients see how you can get juicy, chunky, flavourful chicken chop pieces that pairs with almost anything!

Chicken chop is essentially deboned chicken leg with or without skin. They sell it at my local supermarket, and I have to say next to chicken thigh pieces these are very very juicy when cooked well. In this recipe, I’ve used the air fryer which helps to nicely char the top but keep the inside moist and tender.

I usually get 3-4 chicken chop pieces (skin on) for this recipe. The star of the recipe here is lemongrass. I’ve tried unsuccessfully to grow these in my garden but they just plainly refused to cooperate like my son when he was 2.

This recipe has been heavily influenced by one of Marion Grasby’s recipes. In her recipe she uses pork chop instead and uses a non stick pan to fry the pieces. I am using the air fryer which is (to me) much more convenient and does an EXCELLENT job at keeping the meat juicy on the inside. I also keep to chicken instead of pork.

I use only the white portion of the lemongrass and firstly bruise that part to release all its flavour and fragrance. I also release the tougher exterior parts. I mean who doesn’t love lemongrass. I could have it in my food, in my drink, in my diffuser – it certainly adds a something something which I love.

I minced the end white portion and place in a bowl together with the chicken chop pieces. To that I add some fish sauce, sugar and black pepper. DONE! I don’t need this to marinate overnight – that’s another great thing about the dish. Just prep right before you pop it into the Air Fryer.

I usually brush some oil on top of the pieces as they go into the Air Fryer and flip them midway to ensure the top doesn’t overcook.

We paired this with a pasta (cooked with store bougth sauce + some spinach) and have had this before with rice and a side dish. You could serve it with noodles too – it pairs  very well with a variety of dishes as it is very flavourful.

Air Fryer Lemongrass Chicken Chop

Succulent pieces of chicken chop (deboned chicken leg) with a lemongrass hit and flavours developed from the fish sauce and black pepper. The sugar allows the skin to caramelize giving it a nice crusty top!

Ingredients
  

  • 3-4 pieces chicken chop
  • 3 lemongrass bruise the end white portion and finely slice
  • 2 tbsp fish sauce
  • 1 tsp sugar
  • Sprinkling of black pepper

Instructions
 

  • Place chicken chop pieces in a bowl. Add in the minced lemongrass, fish sauce, sugar and black pepper.
  • Brush some oil on top of chicken chop pieces. Place in a pre-heated air fryer at 200C for 10mins. Flip and continue to airfry for 10mins. Test and see if cooked to your liking. If not, add on a few more minutes. DONE!
  • Lay on chopping board and cut into thick pieces. Enjoy!
