Chocolate Oat Cookies
Chewy oat cookies with a crunchy bite and a chocolate hit! This recipe makes about 16 medium sized cookies.
- 113 g butter
- 140 g brown sugar
- 1 egg
- 2 tsp vanilla extract
- 130 g rolled oats
- 150 g chopped dark chocolate
Sift and mix in a bowl:
- 120 g plain flour
- 1/2 tsp baking soda
Preheat oven to 170C.
Using a mixer, whisk butter and sugar until well combined. Add in egg and vanilla extract. Whisk again. Add in the flour + baking soda and continue to mix until well combined.
Add in oats and chopped chocolate and stir with a spatula. Your dough is ready.
Roll 2 tbsp of dough into a ball and flatten with your palm. Be sure the cookies are spaced well apart on a lined baking tray. If you wish, use a circular cookie cutter and swirl cookie around to neaten edges and round them nicely. Bake for 11-13 mins. I bake mine for 11 mins on the lowest rack.
You want the cookies with golden edges but still soft in the centre. It will continue to firm up once it cools. Done.
Top Tips:
- If the batter gets a bit sticky (in our humidity) just stick it in the fridge for a bit - it will be easier to handle.
- Be sure butter and egg are at room temperature before baking.
- Use good quality dark chocolate.
- Be sure to space cookies apart on baking tray. They need room to 'spread'.
- Use a round cookie cutter and swirl cookies around to create a nice 'round' look prior to going in oven OR you can do this step as soon as they are out of the oven.
