2-Ingredient Banana Pancakes

An easy breakfast idea - using just 2 ingredients!


  • 1-2 large ripe banana
  • 2 eggs
  • (optional) Pinch of baking powder


  • Mash mash mash banana well until runny. It should not be lumpy. Whisk eggs separately in a measuring jug using a fork.
  • Add the runny banana into the jug and mix well in with the beaten egg. Batter will be runny and not thick like regular pancake batter. If using baking powder, sieve in or sprinkle some in and mix.
  • Heat a non-stick pan with some butter. Be sure it is sufficiently heated. Add in 2 tablespoons of batter for one pancake. I pour the batter directly from the jug. Let cook for 1 min or slightly more until you feel the underside is cooked and THEN flip. Cook the other side for just under 1 min and it should be done.
  • Eat warm with your favourite pancake topping such as sliced bananas, blueberries/strawberries, maple syrup, honey, chocolate sauce or softened butter.


Top Tips;
  • Use a nice ripe banana. Mash until banana is runny. Only then will it mix well with the whisked eggs.
  • The pancake batter will be runny and not thick as no flour is used in this recipe.
  • The pancake will be thinner than regular pancakes while still holding its shape.
  • Don't pour too much batter into the pan at one time. Keep them small and easy to flip.
  • They taste almost like frech toast with a creamy like bite.
